this is now our favorite bread. the taste is so refreshing and out of ordinary. i combined a couple of recipes and made a new recipe so i guess i can call this recipe mine. :) please feel free to try it and let me know what you think.
preheat oven to 350 degrees in fahrenheit. grease one 9 by 5 inch loaf pan and set aside.
combine these 7 ingredients in a large bowl. make a well in the center and set aside.
2 c. flour, sifted
1 t. baking powder
1/4 t. baking soda
3/4 c. sugar
1 t. salt
3/4 c. chopped pecans
1 c. dried cranberries
if you're up for more texture and have this in hand, you can add 1/2 c. wheat germ hence you may want a couple of extra tablespoons of milk
combine these 7 ingredients in a medium bowl.
1 egg
1 t. orange extract
1 T. orange zest
1/3 c. fresh squeezed orange juice
orange pulp from the orange you just squeezed(i use a fork to get them out while squeezing the juice out)
2/3 c. milk
1/4 c. oil
if you used wheat germ, add 1~2 T. more milk to prevent thick batter
pour the orange juice mixture into the center of the flour mixture. mix until just moistened. pour batter into prepared loaf pan. bake for 50~60 minutes until toothpick inserted comes out clean. i personally like a thick crust, so i bake almost the full 60 minutes. um... i can smell this bread. cool in pan for about 10 minutes then remove from pan. i personally think this is the best time to have this bread because it's warm yet the crust has a little crunch to it. not only that, the nutty orangey cranberry flavor will burst into your mouth. enjoy!!
